LAYERED RATATOUILLE One of the things I love most about Southern California summers is the abundance of fresh fruits and vegetables available. From grocery stores to farmer’s markets, it’s a wonderful thing to know that the produce I need, and plenty more that I don’t need, is fresh, plentiful and grown locally. Even my meat-eating man was over the moon for this one, which we served with grilled chicken and a warm, sliced baguette. We also agreed that it would also be enough as a full dinner on its own, or served with rice, couscous or polenta. I know you’ll absolutely love this ratatouille adapted from Smitten Kitchen, too, because the flavors are just as vibrant as the colors. SOUR CREAM CHICKEN ENCHILADAS Sour Cream Chicken Enchiladas are rich, creamy and easy to make! Tender juicy chicken, onion and loads of cheese are wrapped in flour tortillas and smothered in a simple homemade sour cream sauce, topped with cheese and baked until brown and bubbly! The best part about this recipe, is that it’s really easy to make (and I’m all about easy in the kitchen). I start with flour tortillas (you can most certainly replace them with corn tortillas if you prefer) and then create a simple from scratch sour cream sauce. Don’t let the words “from scratch” scare you away from this recipe, the sauce is not only easy to make, it’s really quick, creamy and delicious! We sometimes add in a couple of ounces of cream cheese if I have it on hand and stir until hot and melted before adding the sour cream. OREO CHEESECAKE COOKIES I’ve been on some kind of weird shoe kick lately. I mean, they say a girl can’t have too many pairs of shoes, but I shouldn’t really fall into that category because the only pairs of shoes you can see on me on a regular basis are my black $5 Old Navy flip flops. BLT Pasta Salad Before I start telling you all how delicious this BLT Pasta Salad is, I want to say Thank You for your super sweet comments and get-well wishes about me not feeling good. I ended up in the ER Monday morning because of how much pain I was in. My husband was at work and the kids were in school, so it was kind of lonely being in there by myself. Easy Chocolate Italian Love Cake With help from a cake mix, even your kids can make this Easy Chocolate Italian Love Cake! It\\\'s a simple yet impressive dessert that everyone loves! INGREDIENTS: 1 package chocolate cake mix 2 lbs ricotta cheese 4 eggs ¾ cup sugar 1 tsp. pure vanilla extract 1 package of instant chocolate pudding 1 cup cold milk 8 oz. frozen whipped topping (such as Cool Whip), thawed Instructions Preheat oven to 350 degrees F and spray a 9x13 inch pan with nonstick spray. In a large bowl, mix together cake mix according to the directions on the box. Set aside. In another bowl, mix together ricotta cheese, eggs, sugar, and vanilla until smooth. BANG BANG PASTA This bang bang pasta is ready in about 30 minutes with a no-cook sauce that is addictive and easy to make. If you’ve already tried my bang bang cauliflower, this sauce isn’t quite the same. To make it more suitable for pasta, the bang bang sauce is less sweet and more spicy. It’s a few extra ingredients, but it’s still super delicious. Mr. K actually preferred the pasta version over the dipping sauce.
